Baked Pork Loin(serves 4)


Ingredients:
     • 1 jar (2 cups) Carly’s Gold
     • 1 small pork loin (trim all visible fat)
     • 12-oz. jar currant jelly
     • 2 lbs. fingerling or red new potatoes, cut
     • 2 medium-sized onions, sliced

Mix Carly’s Gold and currant jelly together and set aside. Place pork loin in a large baking pan. Add potatoes and onions, placing along the sides of the pork loin. Pour mixture of Carly’s Gold and currant jelly into the baking pan, spreading over all ingredients (Note: save some of the mixture for basting). Place baking pan in oven and bake for 1 1/2 hours at 350 degrees, basting twice. When done, serve with your favorite side dishes.
